Bad mood...

I don't have a real reason to be in a bad mood...well save hormones, the carpet being installed in my house, and the fact that I'm in a slump between birthday and start of school. *sigh* I'm feeling sort of down.

Linda suggested I go visit Jenn and Reece, but with Putt-Putt acting like a brat, I'm a bit afraid of that at the moment. I don't know, I might rent a car and do it, if for nothing else to get me out of town.

I'm missing having girlfriends. I miss Caron bean horribly. I don't know, I just don't have anyone to just be girlie with. Have lunches on Saturdays, or poke around the shops with, or just sit around and watch movies and lust after the male types with. I know, it sounds rather dumb, I'm 28 and carrying on like I'm 16, but.....I rather miss it.

Not that the boys aren't great, but well they are boys. Patric will go to a mall with me, so will Randy for that matter, but it's usually on the specific shopping courses they have. That isn't to say we can't stop somewhere I'd like...but well they aren't as much fun to poke with. Hell, Caron's last visit here we hit three malls and spent four hours each in them.

Oh, and I could never get them to watch a stupid girl movie. WHile Patric does have the strange like of romantic comedy, I couldn't get him to watch Bridget Jones' Diary for the sheer reason he'd be driven mad by my giggling over Colin Firth. I think if he didn't like Valmont so much he wouldn't let me watch that either.

So yes, I need more of the female types. If nothing else than to tell me to hell with diets on a bad day, eat a brownie. To take me out window shopping when I'm bored. And buck me up when I'm in the, "why is it I'm still single at this age" sort of mood.

Ahhh well, best to concentrate on graduating with honors is what I say. *nods head*

Ratatouille...

OK, so Lisa always puts up recipes, and I thought I'd toss one up too. Mostly as it was a) so tasty I ate three helpings, and b) good and healthy and a Dan-friendly recipe. I stoled it off of Bobby Flay, (as Caron worships at his feet), I was watching "Boy Meets Grill". Yum....(Bobby, not food).

1 large eggplant
1 each of sweet green, red, yellow, and orange peppers
1 zuccini
1 yellow squash
1 red onion
1 pckg of mushrooms, I used whites
1 pckg of small tomatoes, grape tomatoes were fine
2 tbsp fresh basil
1 tbsp fresh rosemary
3 tbsp good balsamic vinegar

Preheat oven to 550

Arrange two large cookies sheets. Toss tomatoes and mushrooms on the pans. Then slices eggplant, squashes, and onions into medium rounds. No need to keep them thin, but remember if they are too thick they won't roast properly. Lay these flat on pan. Cut peppers into halves, deseeding and coring as you do so. Place skin side down on pans. Drizzle olive oil on vegetables, just enough to coat well, and sprinkle with salt and pepper. Place in 550 degree oven for fifteen minutes, or until vegetables start to brown or are soft in the middle. Pull from oven, let cool for ten minutes, or until cool enough to handle.

Take tomatoes off the pan, place in bowl. Take other vegetables and dice into smaller pieces, adding to the bowl. Finely chop basil and rosemary, add to mixture. Mix well, add balsamic vinegar, tossing to make sure all vegetables are coated. Serve at room temperature.



I ate three helpings! Soooo tasty. And I'm eating some tonight when I get home. Tasty, healthy food, wahoo.
